I love working with a standard recipe and making alterations to make a variety of different flavors.
At my recent baking class for kids we made three different muffin recipes with one standard recipe.
We made:
- Fresh blueberry muffins
- Chocolate chip muffins
- Chocolate-Blood Orange muffins (I have a blood orange tree!)
Using this standard muffin recipe, you can create a variety of muffin ideas. I will give you ideas at the bottom of the recipe.
Standard Recipe (printable recipe below)
You will need:
- Cupcake liners
- 1 stick butter (melted and cooled)
- 1 Cup sugar
- 2 eggs
- 2 Cups flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt (optional)
- 1/2 cup milk
- 1 teaspoon pure vanilla extract
How to make:
Preheat over 350 degrees F.
- In large bowl, add sugar.
- Add flour and mix.
- Add baking powder and salt. Mix.
- Make a well in the middle of flour mixture.
- Add butter, eggs, milk and vanilla.
- Once all wet ingredients are in the middle, mix til all incorporated. Do not over mix.
- Scoop in cupcake liners with cupcake tins.
- Bake 18 – 20 minutes until done
Additions:
- Add 1 cup fresh or frozen blueberries
- Add 1 cup chocolate chips
- Add 3/4 cup unsweetened cocoa powder and 3/4 cup orange juice.
- Add 4 smashed bananas.
- Add 1/2 cups favorite jam (raspberry, strawberry, etc.)
- Add 1 cup cooked apples with 1 teaspoon cinnamon.
