Muffins – Muffins – Muffins

I love working with a standard recipe and making alterations to make a variety of different flavors.

At my recent baking class for kids we made three different muffin recipes with one standard recipe.

We made:

  1. Fresh blueberry muffins
  2. Chocolate chip muffins
  3. Chocolate-Blood Orange muffins (I have a blood orange tree!)

Using this standard muffin recipe, you can create a variety of muffin ideas. I will give you ideas at the bottom of the recipe.

Standard Recipe (printable recipe below)

You will need:

  • Cupcake liners
  • 1 stick butter (melted and cooled)
  • 1 Cup sugar
  • 2 eggs
  • 2 Cups flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt (optional)
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract

How to make:

Preheat over 350 degrees F.

  1. In large bowl, add sugar.
  2. Add flour and mix.
  3. Add baking powder and salt. Mix.
  4. Make a well in the middle of flour mixture.
  5. Add butter, eggs, milk and vanilla.
  6. Once all wet ingredients are in the middle, mix til all incorporated. Do not over mix.
  7. Scoop in cupcake liners with cupcake tins.
  8. Bake 18 – 20 minutes until done

Additions:

  1. Add 1 cup fresh or frozen blueberries
  2. Add 1 cup chocolate chips
  3. Add 3/4 cup unsweetened cocoa powder and 3/4 cup orange juice.
  4. Add 4 smashed bananas.
  5. Add 1/2 cups favorite jam (raspberry, strawberry, etc.)
  6. Add 1 cup cooked apples with 1 teaspoon cinnamon.

Let’s bake! Ingredients you need: 1⁄2 Cup (1 Let’s bake! Ingredients you need:  1⁄2 Cup (1 Stick) Butter 
3⁄4 Cup Brown Sugar
1⁄2 Cup Granulated Sugar 
1 Large Egg
1 Teaspoon Pure Vanilla Extract 
1 1/2 Cup All-Purpose Flour
1⁄2 Teaspoon Baking Powder
1⁄2 Teaspoon Ground Cinnamon 
1⁄2 Cup Raisins
11⁄2 Cup Quick-Cooking Oatmeal

Ingredients you need: 2 1/2 Cups toasted oatmeal, Ingredients you need: 2 1/2 Cups toasted oatmeal, 1/2 cup ground flaxseed, 2 Tbsp chia seed, 1 Cup chocolate chips, (I also added 3/4 cup dried cranberries). In another bowl, mix 3 Tbsp brown sugar, 1/2 cup avocado oil, 1/2 cup honey or maple syrup and 2 egg whites. Mix well with the oatmeal mix. Press into an 8 x 8 pan. Bake in preheated oven 350 F for 20 minutes. Cool and cut into squares. Enjoy!! #granola #granolabars #glutenfreebaking
