Amazing Blood Orange Cupcakes and Frosting

I have a blood orange tree in our yard. Last year it yielded hundreds of oranges, so I thought this year would be either none or maybe some. Yet, this year’s crop was double last years. I have given away more oranges than I can count. They are the most reddish oranges I have ever seen and they are sweet and delicious.

I decided to work on a recipe that would give a moist cupcake, along with a blood orange buttercream. They are a hit!! You will love them too.

If you want a moister cupcake you will want to add 1 stick butter and 1/2 cup oil instead of the 2 sticks of butter. Also, adding the sour cream makes a smooth and moist cupcake.

You can also use other oranges in this recipe. The blood oranges make a unique taste and vibrant look.

Blood Orange Cupcakes

Ingredients:

  • 3 Cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt (optional)
  • 2 sticks (1 cup) butter or 1 stick/1/2 Cup vegetable oil
  • 1 ½ Cups sugar
  • 4 eggs
  • 1 Cup sour cream (optional)
  • ½ Cup milk
  • Zest of 3 blood oranges
  • Juice of 3 blood oranges

How to Make:

  1. Mix flour, baking powder, baking soda, and salt together.
  2. Mix in orange zest.
  3. In another bowl, beat butter till fluffly. Add oil if using oil.
  4. Add sugar and mix well.
  5. Add eggs and mix well.
  6. Add sour cream and milk well.
  7. Add in flour mixture and mix.
  8. Add juice of oranges and mix well.
  9. Bake in preheated oven – 350 F degrees.
  10. Bake for 15 – 18 minutes.

Frost with Blood Orange Buttercream

Beat 2 sticks of softened butter till fluffy. Add box of powdered sugar (add more if you want a stiffer icing). Fold in zest of one blood orange and juice of orange. Beat until fluffy.

Ingredients you need: 2 1/2 Cups toasted oatmeal, Ingredients you need: 2 1/2 Cups toasted oatmeal, 1/2 cup ground flaxseed, 2 Tbsp chia seed, 1 Cup chocolate chips, (I also added 3/4 cup dried cranberries). In another bowl, mix 3 Tbsp brown sugar, 1/2 cup avocado oil, 1/2 cup honey or maple syrup and 2 egg whites. Mix well with the oatmeal mix. Press into an 8 x 8 pan.
