Crazy Good Carrot Cake

- vegetable grater
- bowls and measuring cups
- 4 each eggs room temp
- 1 Cup oil vegetable or canola
- 1 Cup sugar
- 1 Cup brown sugar
- 2 Cups all-purpose flour
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 3 Cups grated fresh carrots
- Step 1: Mix eggs, oil, sugar and brown sugar together.Step 2: In a new bowl, mix flour, salt, cinnamon, baking soda, baking powder together.Step 3: Mix sugar mixture with flour mixture.Step 4: Add grated carrots and mix until incorporated.Step 5: Pour into two 8-inch baking pans (oiled and flour dusted or parchment paper lined)Step 6: Bake in preheated 350 F oven for 40 - 50 minutes. Cool before decorating.This recipe can also be used to make 18-24 cupcakes.
