Let’s make you the hit of your summer gathering – bring this cake!
It’s not your ordinary yellow or chocolate cake. It’s using fresh strawberries and fresh ingredients to create a moist and yummy cake.
Hint: I look for fresh strawberries on sale and buy in bulk. I keep them in Green Bags (see my Amazon store) to help them stay fresh longer.
I made this cake for a Memorial Day barbecue. It was not only gone, but people were still talking about it a week later. The strawberry sauce gives it even more moisture and sweetness. Of course, a scoop of vanilla ice cream adds a special touch.

Fresh Strawberry Cake
- 2 large eggs
- 1 Cup granulated sugar
- 1 Cup yogurt or sour cream
- 1/2 Cup oil
- 1 tsp pure vanilla extract
- 2 Cups all-purpose flour
- 2 tsps baking powder
- 1/2 tsp salt optional
- 3 Cups strawberries cut into 1/4's
- 1/2 Cup sugar for sauce
- 1. In a mixing bowl, cream the eggs and sugar. Mix on high until creamy - about 4-5 minutes.2. Add sour cream, oil, vanilla. Mix until combined.3. In another bowl, mix four, baking powder and salt together.4. Prepare strawberries by cutting into fourths. Divide into two bowls - one for cake and other for sauce. 4. Pour the egg/sugar mixture into the flour. Fold and mix.5. Pour half of batter into a lined spring pan. Layer some strawberries on top. 6. Pour and spread rest of batter on top and add rest of strawberries on top. Push the strawberries into the cake. 7. Bake at 350 degrees for 40-50 minutes - until cake is baked through.8. In a saucepan, cook strawberries with sugar. Stir until it makes a nice strawberry sauce. Let cool. 9. When cake is cooked, you can take out of pan. Slice cake and pour some strawberry sauce on top!Keep in the refrigerator. Needs to be eaten within two days.
