I love anything lemon. Not sure when I acquired this obsession with the smell and taste of lemons, but if I see a lemon tree there is a good chance I’ll give it a good shaking to see if any fall off. Whether it’s lemon water, lemonade or just a squeeze over a salad or fish, the hint of the sour and sweet taste is amazing.
These Lemon Crinkle cookies resemble the famous lemon bars you see at every pot luck. The best part there are only a four ingredients and you have delicious cookies. Don’t let anyone know the secret weapon of this recipe (cool whip). They probably will never guess how you got these cookies so yummy and chewy – just how I like them! Enjoy!
Although I am giving you the super simple recipe, I also squeeze 2 Tablespoons fresh lemon juice to the recipe. This gives it a more pronounced lemon flavor. I am fortunate to have a lemon tree that is in full bloom right now.
These cookies will yield 15 – 20 cookies depending on how big you make the balls.
