I started eating the Eat Fat, Lose Fat way of eating three months ago. Turns out that avocados are the good fat, really good fat. Now, the best part is one of my students lives on an avocado grove. Her mom brings me organic avocados each week – just because. I love it. I have become obsessed with everything avocado, even making an avocado paste to moisturize my hair (that was a mess!).
Here I made simple guacamole using the good fat, veggies and lime. I am not one to like spicy foods, so I omitted the hot peppers, but you can dice them in.
This recipe is not a measured ingredient how-to. You just have to know how much you want. I will give you estimates but since you’ll make more it more than one time, you can tweek it as you go.
- 2 ripe avocados (mashed)
- 1 diced tomato
- 1/2 diced white onion
- 1 bushel cilantro – diced (clean well and dry in a paper towel before cutting)
- 3 green onions
- 1 fresh lime (squeeze over top of guacamole)
- Sprinkle of sea salt
Toss it all in a bowl and stir. Eat right away.
The guacamole will begin to brown if you do not cover it or stick an avocado seed in the mixture.
Use with tortilla chips, on omelet, on turkey sandwich, or just eat it plain with a spoon!
