Pumpkin Spice Roll-Out Sugar Cookies

  • 1 Cup butter (2 sticks) room temp
  • 1 Cup granulated sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp pumpkin pie spice extract
  • 3 drops orange food color
  • 4 Cups all-purpose flour


  • Start by beating the room temperature butter and sugar until it is light and fluffy with a stand mixer.
    Beat in the eggs until the dough is smooth.
    Mix in the spice and extract.
    Add drops of orange color.
    Stir in the flour, until a stiff dough.
    Refrigerate the dough for at least two hours.
    Preheat your oven to 350°
    Sprinkle flour on your work surface and use a rolling pin to roll out the dough about 1/4  inch thick.
    Use your  cookie cutters to create shapes. Bake the cookies for 10-12 minutes until golden on edges of cookies.
    Remove them from the oven and let them cool before decorating.
